Olive Oil Vinaigrette
We eat a lot of salads, and we want them to be tasty and healthy at the same time. So, in addition to some lettuce, spinach, tomatoes, carrots, onions, peppers and cucumbers, we like to add in some delicious dressing.
I eat a salad almost every day for lunch and always had just used some dressing off the shelf from the supermarket. I never really paid close attention to the label. I was seeing unusual and unhealthy oils and ingredients like soybean oil, canola oil, MSG and maltodextrin I identified, which, research has increasingly indicated that I should avoid.
Oils like soybean or canola, are typically made from GMO ingredients, with soybean oil being 90% GMO.
Further, these oils, which are partially hydrogenated, and can lead to adverse health effects as bad as heart disease.
It does not get any more serious than that.
But, at FitFunFoodies, we try to keep it simple. This recipe does not contain those ingredients, and is both healthy and delicious.
It can be tailored to include different spices like basil, cumin or paprika. The one we have below works for us. But you are only limited by your imagination and taste buds.
Here is the recipe.
- 1.5 cups extra virgin olive oil
- 6 tbsp vinegar
- 4 cloves garlic
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp oregano
- 1/4 tsp crushed red pepper
- 2 tsp dijon mustard
- Chop garlic
- Add all ingredients, except olive oil to ball jar
- Stir or shake to combine
- Add olive oil to top off
- You need to add the olive oil separately as the mustard will not emulsify (similar to mayonaisse)
